Let’s face it. When we think of “eating healthier”, what comes to mind? Let me guess – a salad. While, yes, they can seem boring and cliché *insert eye roll*, I am here to tell you there actually are important benefits of incorporating a well-rounded salad into your diet (and no, it’s not to “cut calories”!). 

Now, you might be asking yourself, “what constitutes a well-rounded salad?”. A mix of spinach, lettuce, and arugula? Wrong. The answer is simple – one that includes proteins, healthy fats, and carbs. So if you’re like me and are SO over paying $15 for a salad, I highly suggest recreating your very own. I made a honey chicken salad for the past week and my husband and I can’t help ourselves by saying “this is the best salad ever” every. single. time! I am more of an eyeballer when it comes to ingredients, so you can season your chicken and add or reduce the quantities of items to fit your preference.

Ingredients

+ salt 

+ pepper

+ garlic powder

+ oregano

+ chopped romaine lettuce

+ arugula 

+ shredded carrots

+ warm quinoa

+ roasted corn

+ crispy onions

+ chicken breast or thigh

+ homemade honey dijon dressing 

 

Honey Dijon Dressing

+ 1/3 cup of olive oil

+ 3 tbsp of apple cider vinegar

+ 1 tbsp of dijon mustard

+ 3 tbsp of honey

+ 1/4 tsp of salt

+ 1 tsp of black pepper

 

Directions

  1. Season your chicken to your liking (I like to add salt, pepper, garlic powder and oregano). If you’re using an air fryer, cook for 10 minutes on one side, flip and cook for 8-10 minutes on the other side. Chop up and set aside to cool. 
  2. Add the ingredients for your dressing in a medium sized bowl. Mix well.
  3. Once you have all your ingredients ready, toss them all in a mason jar and give it a good shake! You can eat immediately or take it with you on the go!

 

A well-rounded salad, such as the one above, that incorporates a balance of protein, fats, and carbohydrates offers a myriad of health benefits. Firstly, the inclusion of protein is crucial for maintaining and repairing tissues in the body. Proteins are composed of amino acids, which are essential for the formation of enzymes, hormones, and immune system components. Additionally, by adding protein-rich ingredients such as grilled chicken, tofu, or beans to a salad, you’ll feel full and satisfied.

Healthy fats might sound a bit like an oxymoron, right? Stick with me… Avocado slices, olive oil, or nuts not only add a delightful flavor and texture but also provide monounsaturated and polyunsaturated fats that are heart-healthy! These fats play a key role in nutrient absorption, particularly fat-soluble vitamins like A, D, E, and K. Moreover, they contribute to cognitive function, support cell structure, and have anti-inflammatory properties. 

Finally, the other forbidden fruit — gasp — carbs! The inclusion of carbohydrates in a well-rounded salad completes the nutritional trio. Whole grains, fruits, or vegetables in the salad provide complex carbohydrates that serve as a primary energy source. These carbohydrates release energy gradually, promoting sustained energy levels throughout the day. Additionally, the fiber content in complex carbohydrates aids in digestion, regulates blood sugar levels, and supports a healthy gut microbiome. Overall, a well-balanced salad with the right combination of protein, fats, and carbs is not only a flavorful and satisfying meal but also a nutritious powerhouse that contributes to overall health and vitality.

Honestly guys, I’m completely in love with this salad (I wasn’t lying when I said I can’t help myself when I say this is the best salad ever). So, in the famous words of Tanisha Godfrey… y’all better come up here and get one of these. And yes, it’s a chicken salad.
